Why wild
Caught in the Croatian Adriatic.
Our bluefin tuna and swordfish are not raised. They live and feed freely in the open Adriatic, without formulated feed or routine aquaculture treatments. Every wild fish develops differently, which can bring natural variation in fat distribution, texture and flavour from one catch to the next.
- Natural feeding ·
- Open water ·
- Individual character ·
- Limited by nature
Wild availability follows the Adriatic. The sea, the season and the legal fishing framework decide what we have, not a production schedule.
The Adriatic
The sea behind the fish.
The Adriatic is part of the Mediterranean Sea, known for its clear waters and a distinctive marine environment, often regarded as among the cleaner parts of the Mediterranean. The character of the sea, its open water and natural feeding conditions all form part of the story behind each fish we supply.
The fish begins in a real place. The Adriatic is not just a point on a label. It is the environment that shapes each fish’s story, and the starting point of the traceability behind every Fish Passport.

Traceability & standards
Fish Passport is the customer-facing layer of our traceability. Behind it sits the professional documentation and handling framework required throughout the supply chain.
ICCAT / eBCD
Where applicable, wild bluefin tuna is accompanied by the relevant ICCAT / eBCD catch documentation and moves through the professional EU seafood supply chain. This sits behind Fish Passport and is separate from it. Fish Passport is our own customer-facing record of an individual fish's story.
HACCP
Processing and packing take place in approved professional partner facilities working under HACCP-based food-safety procedures.
Ikejime
Each fish is caught individually by hook and line, then stilled using the Ikejime method. It is rapid, controlled handling immediately after capture that preserves the texture, colour and quality of the flesh.

Our wild Adriatic bluefin tuna carries the “Fish from Croatia” mark, the Croatian Chamber of Economy's national origin and quality programme for Croatian fishery and aquaculture products.
We work directly with licensed Croatian fishermen and selected professional partners. Individual certificates and handling standards are linked to the relevant fisherman, vessel or partner where applicable.
